Foods and recipes are one of the most important topics when trying to lose weight.I wanted to talk about my Instagram account and how this has helped so far. Also I wanted to talk about what I’ve been eating too…

I love following Slimming World foods, but its great one with sticking to plan I struggle with. 5 years ago I lost over 4 stone, but then I stopped doing everything I was working so hard on, the hours at the gym, following the slimming world plan and put it all back on. My life from that moment consisted of me being lazy and eating whatever the hell I wanted. It wasn’t until the clothes I fought so hard to get in to started to not fit that I thought it really need to get myself together. I would struggle to get into them never-mind them fitting.

Another reason for my motivation is my sister has just got engaged, and she is already planning her wedding. Hopefully I am being one of the bridesmaids (I hope so anyways as she is yet to ask – sisters are always bridesmaids right?). I want to look the absolute best for my sisters wedding. This has totally spurred me on to succeed even more.
So I started my journey at the end of January, and decided to weight myself at home than go to a local slimming world class or any other local diet group.
I look to get weighed every Tuesday, and I’m very pleased to say I’ve lost 4lbs which is a great start, I’m over the moon! Last week I maintained but I was happy with this as I was poorly with a bug so didn’t eat much nor do any exercise.
I have found Instagram really helpful lately and gained loads of recipe ideas. The best way to find recipes is to search relevant hashtags like #slimmingworld etc and all relevant images will come up, a lot being recipe ideas.
The social media platform is a great way to follow peoples journey and look at their transformations. There is so many inspiring stories to see and read about, it certainly has inspired me more.
For the first time this week I did an Instagram live. It was nerve wrecking but I did it. It allowed me to engage with other people on similar journeys and talk about related topics. I defiantly will be doing more live streaming and stories in the upcoming months.
This week has been really nice to opportunity to go back to old favourites and discover new foods too.
I’ve actually enjoyed all of my meals this week but I think my favourite has to be Broccoli cheesy garlic bread , it was totally syn free. Really filling too!
I’d been reading a lot regarding using cauliflower as based so what better way to mix it up even more and use one of my favourite vegetables.
It was so easy to make and so filling. I served it with some homemade slimming world chilli to go with it.
Here is the recipe for the Broccoli cheesy garlic bread.
Prep time: Cook time: 25 mins Total time: 40 mins
- 1 head Broccoli
- 1 large egg or 2 egg whites
- Grated cheese (add to your taste – I used my healthy A choice in slimming world)
- 1 tablespoon dried Italian seasoning or mix of dried herbs (I used thyme, basil and parsley)
- Salt and pepper
- 1 teaspoon of paprika
- 2 garlic gloves or tablespoon of garlic powder or paste (I used paste)
- Preheat oven to 180.
- Cut it into Broccoli florets. Place them in the bowl of a food processor and pulse until the Broccoli is finely chopped and looks like rice.
- Transfer the Broccoli to a microwave-safe dish or bowl. Cover and cook in the microwave for 10 minutes. Alternatively, you can steam the Broccoli in a steamer.
- Transfer the cauliflower to a mixing bowl and add the egg, Italian seasoning, half of your cheese allowance, ¼ teaspoon salt and ⅛ teaspoon pepper. Add garlic and then mix to combine.
- Transfer the mixture to a baking sheet lined with parchment paper. Form the dough into a rectangle about ¼-inch thick.
- Bake in the oven 15-20 minutes until cooked. Remove the baking sheet and sprinkle the remaining ½ cup cheese over the top. Bake another 5 minutes until cheese is melted.
- Cut Broccoli cheesy garlic bread into pieces and serve.
For breakfast I’ve either been mixing it up between baked oats or Branflakes and Banana . Lunches have been salads, omelette or homemade vegetable soup.
Dinners have been a mixture, I’ve really upped my vegetable and fruit intake. I have had a mixture of fish, chicken and turkey. I even made my own slimming world Pizza.
I buy all of my meat from my local butchers. Although I have heard many people purchase their meats from Muscle Food, so I may have to look into them further.
Exercise this week has been massively improved. I have upped my game and I went back to the gym.
I really enjoyed going back to the gym this week. I won’t go into the gym as I wrote a blog post earlier this week about making my comeback after gallbladder surgery.
Overall it has been a great week so far. I will let you know what my results are from my results on the scales. I will be getting weighed on Tuesday – lets hope my efforts are reflected on the scales.
